Why I Built Foodī Academy

I didn’t start with a business plan.
I started with a cake recipe, a borrowed kitchen, and a conviction that I could build something real.
That was 2019.
No investors.
No inherited blueprint.
No established network guiding me through food manufacturing, compliance, or government contracting.
Just vision, resilience, and a willingness to learn at every level.
Over the past seven years, I’ve built a licensed food business that serves corporate and institutional clients across multiple states. But the part people see, the polished product, is only a fraction of the story.
Behind every shipped order and every cake out the door was a system I had to build from scratch.
And what I learned early on was this:
The information gap is bigger than the talent gap.
I wasn’t lacking skill. I was lacking access.
Access to regulatory clarity.
Access to operational best practices.
Access to capital pathways.
Access to rooms where real revenue conversations were happening.
So I learned.
I navigated local and state health department requirements.
Built and refined HACCP documentation.
Secured ServSafe certification.
Registered in federal procurement systems.
Self-certified as a Women-Owned Small Business and Minority-Owned Small Business while formal certifications progressed.
Restructured pricing models until I achieved sustainable 52-60% gross margins.
Studied cold-chain logistics and fulfillment strategy.
Built partnerships.
Wrote grant applications.
Lost some. Won some. Improved every time.
None of that was accidental.
It was operational discipline.
And what all of that building became was CakedMail.
Our corporate gifting line is what seven years of systems refinement looks like in product form.

Logistically sound.

CakedMail is not just a product.

At some point, I stopped just running a food business and started architecting one.
I documented everything:

Vendor onboarding systems.
Margin modeling spreadsheets.
Procurement registrations.
Fulfillment workflows.
Grant writing frameworks.
Seven years of operational refinement turned into twelve structured curriculum resources.
And one realization:
This is what I needed when I started.
Prince George’s County is home to hundreds of food entrepreneurs. Yet access to licensed commercial kitchen space remains limited, and structured pathways from product to procurement are almost nonexistent locally.
Founders are talented. The region is vibrant. But infrastructure gaps slow momentum.
The issue isn’t creativity.
It’s systems.
And that’s why I’m building Foodī Academy.
